The Swan Theory [en]
I think restaurant people wake up every single day, trying to reinvent calm out of chaos.
They are really good at making things look like everything’s working, when in fact it may not.
We call it the »swan theory«.
Restauranteurs are great at being swans: All you see, is this incredible gracefulness above the water.
If you only knew what’s going on under the surface of the water — you’d be shocked.
